This is the season for grilling!  Sometimes I go to a friend’s BBQ I want to skip the bread, but then all I’m left with is a dried out burger, do you know what I’m talking about?  Please don’t let yourself be that host!  There are so many great dishes to make out of ground meat and one of my favorite go-to recipes is Kofta; a traditional Middle Eastern kebab, which consists of ground meat and spices.  The flavors vary depending on the country, but mine are beef with some of my favorite seasonings and chopped pistachios for some crunch.

I like to eat these alongside a salad or grilled vegetables, but they also work great on a bun.  Try them with hummus or yogurt sauce, you’ll be hooked!  They are simple and easy to make, but have a ton of flavor. With the addition of the Kelapo coconut oil, as well as the egg yolk to bind it all together, they stay juicy and moist (taste great as leftovers too).

I grill just about everything this time of year, but if you don’t have a grill…not to worry, these kebabs cook up perfect in a skillet as well.

 

Beef and Pistachio Kofta

Makes about 10 skewers

16 oz ground beef, grass fed

½ yellow onion, minced

1 clove garlic, minced

1 Tbsp Aleppo chili pepper

1 tsp coriander

1 tsp cumin

¼ cup ground pistachios

1 Tbsp parsley

1 Tbsp mint

1 egg yolk

1 Tbsp Kelapo Coconut Oil, melted

Kelapo Coconut Oil Spray for cooking

 

  1. Mix all ingredients together and refrigerate for 30 minutes.
  2. Form 2-3 Tablespoons of beef onto skewers in an oval shape. If using bamboo skewers, make sure to soak them in water at least 30 minutes prior to using.
  3. Cook on the grill or in a in a heated griddle or sauté pan over medium-high heat until browned on each side.
