Almond Joyful Brownies

As the unofficial chef here at Kelapo, I’m always creating new and easy recipes that use our virgin coconut oil in place of butter or vegetable oil. With the weather getting colder–65 degrees this morning. Brrr! I’m a Florida girl, what can I say?—Anyway, colder weather and the upcoming holidays get me in the mood for baking. My most recent experiment is definitely worth sharing. I’m a sucker for boxed brownie mix on sale, and I found a delicious Betty Crocker Dark Chocolate brownie mix. Of course I substituted the 1/3 cup vegetable oil for Kelapo Virgin Coconut oil and added the water and egg that the recipe called for. Since Erin said they tasted like an Almond Joy without the Almonds (Mounds?) I made frosting with some sample Almond Butter from a booth at Expo East (Thanks Blue Diamond!) and now they are perfect!

Here’s the easy recipe for my Incredible “Almond Joy” Brownies:

Brownies:

  • 1 batch brownies, made from mix, substituting Kelapo Coconut Oil instead of oil or butter (1:1 ratio)

Frosting:

  • 1 package (8 oz) Cream Cheese, softened
  • ¼ cup almond butter
  • 1 cup sifted powdered sugar
  • 1 Tbsp Kelapo Virgin Coconut Oil
  • Splash of Almond milk (to desired consistency)

Blend well with a hand mixer and spread over brownies. Enjoy!

These are so good, don’t be surprised if they turn up at our booth at Expo West!
