5 Ingredients, 5 Minutes The Fastest Dinner Ever

Roasted Tomatoes and Onions

Last night I set a record for fastest dinner ever, with the fewest ingredients that still satisfied a hungry belly.  Here’s how it went down.

Boyfriend: “I’m really hungry.”

Me: “What do you want for dinner, a salad?”

BF: “Nah…”

Conversation ends, he continues to watch tv and drink a glass of wine.  10 minutes later.

BF: “What’s for dinner?”

Me: “Well I can make you a nice healthy salad, quinoa, whole wheat pasta…. What would you like?”

 

Chick Peas and Spinach in Coconut Oil

BF thinks about it and again, continues watching tv.  Meanwhile, I don’t want to get up and make dinner because I’m also enjoying a glass wine and already know that my dinner will be leftovers from last night and he doesn’t eat leftovers so he’s out of luck!  After his second glass of wine, he’s hit the hunger wall and ready for his meal now!  I pull myself together and in 5 minutes produce “Roasted Tomato and Onion, Chickpea and Wilted Spinach Delight”

 

 

 

 

 

 

Dinner is Served

Ingredients:

Tomatoes, Chick Peas, Onions, Spinach, Coconut Oil

Directions:

Slice tomatoes and onions and arrange on cookie sheet. Sprinkle with pepper, oregano, and salt if you wish. Broil on high for 2-3 minutes.  Add 1-2 tbsp coconut oil to saute pan on medium heat.  Add chick peas and spinach.  Saute until spinach is wilted.  Transfer chick peas and spinach to serving dish.  Add tomatoes and onions on top.  That is a 5 minute meal with 5 ingredients.  Note- I wouldn’t have “roasted” the tomatoes usually but the BF requested it.  Otherwise, I would have just added them and the onions into a saute pan with the rest of the ingredients like a regular person.  🙂
