Occasionally I like to do vegan dishes to maintain a healthy diet. All the different colors and flavors make my heart (and my stomach) happy and full. Since this is a vegan dish, I use Kelapo ghee instead of butter which has dairy. I love to eat soup, no matter the weather! This coconut curry lentil soup recipe is a wonderful vegetarian option, and the lentils are a great source of protein, but feel free to add whatever meat you like. Although this is a lighter meal, the 2 tablespoons of Kelapo coconut oil will keep you feeling full and satisfied. Mahi Mahi Tacos

Tomorrow is Taco Tuesday, my favorite day of the week! Taco Tuesday is a big deal in my house because it’s one of those meals that brings the whole family together. The kids really enjoy making their own tacos and adding whichever ingredients they like. I always bake my fish with a dollop of kelapo ghee so the fish doesn’t end up drying out.
